3 Ingredient Pumpkin Mini Muffins
I know you have probably see the 2 ingredient pumpkin muffin recipe
floating around the internet and pinterest. Well, this one is very
similar, but with two changes: 1. Different cake mix 2. Adding decaf
coffee.
Yes, decaf coffee. Sound weird, but I have made the two ingredient muffins and while they were good, they were a little too dense for me. I wanted a way to lighten them up some and I had some left over coffee. I'm not sure what made me put the two together, but it was a great combination! The muffins came out more light and airy and not too sweet! I also made mini muffins which makes them about 55 calories per muffin (without the glaze).

Spinach Zucchini Patties
Last night I took out some ground venison to thaw so that I could use half of it for meatballs and the other half for tacos tomorrow. I starting getting my meatball mixture together (I go very veggie heavy in my meatballs), once that was all mixed I went to open my package of venison and there it was... Venison link sausage, not ground venison. Crap... So now I have this mixture that I don't want to waist and no meat thawed. I am the queen of improvising so I looked at what I had and thought, this would probably make a pretty tasty patty. I made a few additions to the mixture and did a test batch. YUM! And pretty healthy too!
Pumpkin yumminess!
While visiting one of my dearest friends last year, her mom made us the most amazing dessert EVER, Pumpkin Crunch. If I had to choose a last meal, it would be this, with a side of this and this as dessert with a scoop of vanilla ice cream. It's that good...
I'm chomping at the bit for a reason to make this... Wait, it's Thursday, right? Thursday is as good of a reason as any to me! And if I could actually muster up enough energy to get off the couch (this cold is kicking my butt), I might actually make it.

Sweet Potato & Sausage Soup
Two things make me want soup, cold weather and colds. Since we are in
Florida and it's September, you know it's not cold here so that leaves
one thing... yep, I'm sick, as is my son, Moose, and the hubby (he was
the carrier of the germs...)
As a child (and to be honest, many times as an adult) when I got sick, my mama made me potato soup. So, I don't want chicken noodle, I want potato soup when I'm sick.
Last night I made a new variation of my mama's potato soup (mainly because I was very low on white potatoes). I made a Sweet Potato & Sausage soup and it was delicious! So good, in fact, that I felt like I had to share! I am not usually one to repeat a recipe to the tea, so vary these ingredients to your taste. I don't think I have ever made a recipe the same way twice, it all depends on my mood.
