So tonight was one of those "I can't make up my mind on what I want for dinner so I'll have a little of everything" night. I have this problem anytime I get a fully stocked fridge/freezer and since I have made two publix trips, a farmers market trip and a produce stand trip this weekend, to say I am fully stocked would be an understatement. So here's what we had for dinner and the recipes, they are all super simple and involve minimum cooking!
Bacon Wrapped Asparagus
Bruschetta with Sliced Mozarella & a Fresh Baguette
Baked Avocado Fries with Spicy Lime Mayo Dipping Sauce
Bacon Wrapped Aparagus
What you need:
Asparagus (trimmed of the woody stalks)
Turkey Bacon
Salt
Pepper
Olive Oil
Preheat oven to 400. Take about 5 stalks (more or less depending on how thick they are) and wrap one piece of bacon around them at an angle. Place on a baking sheet. Continue for the desired amount of bundles. Drizzle with a little olive oil and sprinkle with salt and pepper. Bake until the bacon is done and the tips of the asparagus start to caramelize.

Bruschetta with Sliced Mozarella & a Fresh Baguette
What you need:
1 Medium Tomato, Chopped (choose a meaty tomato one with fewer seeds)
1/2 Tbsp Fresh Chopped Basil (sorry folks, dried just won't do)
Splash of Balsamic Vinegar (start with a little and add to suit your taste)
1 Clove of Minced Garlic
Salt & Pepper
1 Fresh Baguette
Olive Oil
Mozzarella Cheese Sliced
Preheat oven to 400. Combine all ingredients in a bowl and let it set while you slice the baguette and the cheese. Place bread on a baking sheet and drizzle with olive oil. Bake until it reaches your desired crispness. Top each piece of bread with the tomato mixture and a slice of cheese.
That's it for that one!
Baked Avocado Fries with Spicy Lime Mayo Dipping Sauce
What you need:
1 Avocado Sliced into strips
1 Cup of Flour
1 Egg (maybe two)
1 Cup Seasoned Breadcrumbs (or panko)
Salt
Dipping sauce
2 Tbsp Light Mayo
Lime Juice
Hot Sauce
Chili Powder
Garlic Salt
Pepper
Preheat oven to 400. Salt the avocado strips and dip in flour, egg wash and then the breadcrumbs. Place on a sprayed baking pan. Bake until golden brown and flip about halfway through. While that's cooking, mix all of the ingredients for the dipping sauce in a small bowl adding more or less spice to taste.
And that's it! It was super simple, but my 3 year old said it was the best picnic ever. Even though we ate it at our dinner table and no one said it was a picnic!
